Hummus Beiruti

Hummus is a paste made from chickpeas, tahini, and spices and it goes great with a wedge of flat bread, as a salad accompaniment, or with some vegetable wedges for dipping.


This guacamole recipe couldn't be simpler, and it tastes far more soothing and tasty than the readymade stuff – and with the red colours speckled through, looks a damn site more appetising!

Raita is an Indian, Bangladeshi or Pakistani condiment made from yogurt (dahi), it is used as a dip or a sauce.
